This protein pancake recipe has literally been on repeat for me the past week or so! With over 25g protein, 9g fiber and 2g net carbs, these are the perfect low carb, high protein pancakes to keep blood sugar balanced and cravings at bay. That way you can stay on track with your eating plan and feel incredible while losing weight.
Ingredients for protein pancakes:
- 1 scoop vanilla protein powder
- 1egg
- 1/4 tsp. baking powder
- 1 Tbsp. acacia fiber (optional)
- 1/2 cup water
- Fat topping: 1 Tbsp. nut butter or butter
- Optional topping: 2 Tbsp. berry chia jam
Directions for protein pancakes:
Mix protein powder, egg, baking powder, acacia fiber and water in a bowl. This recipe uses pea protein powder. Depending on your protein powder you may need more or less water. Slowly add until it creates a pancake batter like consistency like pictured below.
Heat a pan on medium heat and spray with oil. Cook pancakes for a few minutes on each side. They should be easy to flip by the time you go to flip them. If they are breaking apart when you go to flip wait a little longer.
