
Makes one serving
You will need…
- 2 eggs
- 3-4 slices turkey bacon
- 1/2 cup potatoes, chopped
- 2-4 tbsp. shredded cheese
- broccoli
- oil spray
- salt and pepper
Directions:
Roast the potatoes & bacon
- Preheat oven (or air fryer) to 400°F.
- Toss chopped potatoes with oil spray, salt, and pepper.
- Place potatoes and turkey bacon on a baking sheet (or in the air fryer).
- Cook until golden brown: about 15 minutes in the air fryer or 25 minutes in the oven.
Cook the eggs
- Spray a pan with oil and cook 2 eggs to your preference (scrambled, fried, or poached).
Cook the broccoli
- Option 1: Roast in the oven with oil spray, salt, and pepper.
- Option 2: Sauté on the stove with oil spray, salt and pepper.
- Option 3: Microwave with a splash of water until tender.
- In the last few minutes of cooking, sprinkle cheese over the broccoli so it melts.
Assemble the bowl
- Chop the turkey bacon.
- Add potatoes, broccoli, eggs, and turkey bacon into a bowl.
