If I told you my family and friends enjoyed these cookies better than the infamous Betty Crocker’s cookies would you believe me? We’ll start believing, cause it’s true! I’ve been making these cookies for weeks now and finally decided I wanted to share them with you guys too. There crispy, but soft in the middle. And sweet, but not too sweet so you can actually taste the flavors of the cookie. There perfect, if I may say so myself =P Plus they also happen to be vegan, paleo, gluten free, dairy free, and all that jazz.
So when I had a movie night with some friends and people were preferring my cookies over little miss Betty Crocker’s, you can only imagine how happy that made me.
When your a “nutritious” baker like me there’s nothing better than one someone confuses your deserts for “the real thing.” Or when your best friends tries them and actually admits they were really good even though she usually makes fun of my “healthy shit.” Or when my sister thought mine were better than a “normal” cookie.
These cookies are a must try! Trust me, this is coming from the cookie monster herself. I’ve never met a chocolate chip cookie I didn’t like, and these are no exception to that statement. The only thing I don’t like about most cookies is the crash you get right about the time you finish eating it. These cookies are filling rather than leaving your body physiologically needing more and will not cause that crash. At the end of the day, most cookies you buy in a store are formulated to make you feel like you cant stop eating them. So when you feel like you can’t put down that box of Entenmann’s or Chips Ahoy and find yourself wanting to take a nap afterwards, its not your fault! These cookies will most likely give you a little energy rather than put you to sleep.
So clearly I’m going to share the recipe to these low carb, high fiber, delicious tasting cookies. I promise, they’re just as good as your traditional chocolate chip cookie, but there actually satisfying! I usually say I hope, but I know you’ll enjoy =]

My FAVORITE products to use for this recipe to make them extra delicious are..
Almond flour: Bobs Red Mill or Trader Joe’s
Low sugar chocolate: Lily’s chocolate (no like seriously I’m obsessed with this brand!)
Monk fruit: Lakanto
Vanilla bean ghee:4th & Heart (you can use coconut oil, regular ghee or even butter but this does really take them to the next level in my opinion!)
- 2 1/2 cups of almond flour
- 1/3 cup vanilla bean ghee, buttered flavored coconut oil, or original coconut oil (melted)
- 1/3 cup maple syrup (to make them even lower carb you can do 1/2 of the 1/3 measuring cup maple syrup 1/2 monk fruit and they are still so delicious if not more!)
- 2 tsp. vanilla extract
- 1 tsp. baking powder
- pinch of sea salt
- 1/3 cup chocolate chips (the one’s I’m obsessed with are linked right above this recipe)
- Preheat oven to 350 degrees F. In a mixing bowl combine all dry ingredients.
- Add in wet ingredients until distributed evenly. This will create a dough like texture. Then add in chocolate chips.
- Roll into balls and press down into a cookie shape. Bake in the oven on parchment paper and bake for 18 minutes.
- Let cookies cool for 10 minutes before trying. Then Enjoy =]
